I've been cooking quite a bit with this set and do recommend them to the casual cook and/or the professional. The major thing I've noticed is the amazing heat distribution of these pans. I cooked at friends house a couple weeks ago on a crappy electric range and the tuna steak we were cooking turned out perfect like I was cooking at home on my gas range. Also a notable achievement is the easy clean up of these pans. The smooth design seemed cosmetic at first but I've been grateful for the rounded interior edges, they've saved me hours of clean up. Amazon offered a bonus for purchasing Calphalon pots that I never received because the orders were split and they refused to honor it. Next time, I will order directly through the vendor or shop in person for this type of purchase - the vendor did their part efficiently. The pot is well worth the money and I take care to heat and cool it slowly to avoid any possibility of warping.
Customer Review: Truly an Everyday Pan
This is my first official review of anything, ever, I believe. First off: I needed to start a "grown-up" collection of cookware. My collection had consisted entirely of the visions cookware my mother gave me when I moved out on my own over ten years ago and the sad pieces I inherited when I purchased my late grandfather's home from his estate (mostly revereware). I had never purchased anything for myself and discovered I did enjoy cooking (and pretty well if I might humbly add) when I moved out. So for over ten years I have been cooking on very lousy cookware. I managed to get some great pieces at yard sales - mainly Le Creuset. I decided to ask for some good pieces for Christmas last year and did some research on ratings to determine the brand I would try. Two of Calphalon's lines made the top two spots in consumer reports two years ago, so I took a look at them and loved the look of this line. Plus, I had heard for years that copper was the way to go. I received three pieces that Christmas and this was one of them. They hung in my kitchen (after my husband made a special rack for them) for at least 3 months before I got the nerve up to try them out. I thought "I can't wait to try them" when I received them, but once they were hung up I thought "They are too pretty to use and scratch up". I got over that eventually and now find myself constantly reaching for this pan in particular. I use it almost everyday. The size is wonderful. Large. I used a much smaller saute pan almost daily and can't believe the difference. PROS/GENERAL COMMENTS: Let it heat up before adding meats and they will release better. It heats evenly - even on an uneven cook surface that tilts to one side. It browns beautifully. I've never burned anything on it. These pieces have a nice weight to them for cooking but are easy to handle (although I did read another tri-ply copper piece review by a woman with arthritis who had trouble with the weight and handle length.) I like that it can go into the oven so you can brown something nicely then finish it off in the oven as some recipes call for. And you can heat it to 450 degrees. I like the brushed finish as opposed to the mirror finish some other brands use. I think it looks more elegant. It would probably make a half decent wok or stir fry pan in a pinch. It has some depth to it compared to skillets. You are not supposed to use non-stick sprays on this line, and I haven't. Just use a bit of olive oil, it's good for you. It cleans up easily - though the outside does spot up and tarnish quickly. I also soak my in the sink when I'm too lazy to clean up that night - and you aren't supposed to do that with these pans. The tarnish comes off very quickly (if you care) with salt and white vinegar or Never Dull. I just polished mine for the first time today. CONS: The color they tarnish to is an odd yellowy color. Not like better French cookware. You think the pot actually is permanantly discolored, but it's not. I don't think the actual copper content is very high, but they do the job promised. The handles attached to this pan do get hot. The lid does not. It does get scratched, but I don't care about that. CONCLUSION: I like this line. It cooks nicely and cleans up well. I am now in the process of ordering a ton of Calphalon items from Amazon that are priced so low I couldn't resist. Mainly the Commercial Anodized line. I will review those when I get the chance to use them a bit. If you like to cook and don't have the proper tools, do yourself a favor and get some good pans and knives. I used Ginsu steak knives as cooking tools for almost ten years, and "oh the humanity". I almost gave up ever making salads entirely because I dreaded chopping/sawing things.

It has a durable brushed stainless steel surface on the inside and a highly polished stainless steel surface on the outside. Viking professional cookware has a multi-ply construction. It's a combination of aluminum alloys and stainless steel which Viking says will give "lifetime performance, durability, easy cleanup and quick even heating". What sets these pots apart are their ergonomic stainless steel handles and extra large lids.

Another popular cookware manufacturer is Demeyere. Demeyere has a line of induction cookware, something new to a lot of cooks and very expensive. These induction pots and pans have 7-ply construction and use materials that limit heat to 250 degrees celsius. This can actually prevent many foods from burning.

A much more easily affordable quality cookware set is All Clad. They offer several different types of cookware, the All Clad Copper Core and the All Clad Master-Chef 2. The Culinary Institute of America also has a cookware set out called the CIA Masters Collection. It was designed by the certified master chefs at the CIA. It has a 7-clad construction and a copper core.

The professional cookware sets that we've mentioned above range in price from $1900 to $600 for a 10-piece set. Most of them offer multi-ply, and, as in the case of CIA and Demeyere, 7-ply. Most have copper cores, aluminum interiors and stainless steel exteriors. So how do you choose?

The way most people choose is money and appearance. My suggestion would be to buy one pot, or pan if possible before you buy an entire set. That way you can use the cookware and see if you really like it before you commit to it.

Kitchen Essentials® by Calphalon® Stainless Steel 10-pc. Cookware Set

Customer Review: Complete disappointment!!
I have waited for years to buy Calphalon cookware because I was under the false impression of its quality. I had an old set of S. S. Waterless Cookware made by Ecko; the Ecko set outperformed Calphalon in every measurement. My thought for buying the new set was Ecko cheap, Calphalon quality. Every thing sticks in this set, pork chops even stuck to the so called non-stick surface pan; and no the chops were not right from the fridge, that would cause them to stick. Some of the pans without non-stick coating had dimples in the metal. The box states they are dishwasher safe; however the instructions state differently. On an electric stove one of the pans developed burn marks on the bottom of the pan over medium high heat. The list goes on, and if you contact customer service you get canned answers to send the cookware to them at your cost; they did not read mine. Oh they did tell me I could keep the lids, no wonder they do not fit; you can move them about 1/8" back and forth. DO NOT BUY!!

But stainless steel is dishwasher safe, and Amazon's product description claims that Calphalon's stainless steel line is dishwasher safe. But if you check out www.calphalon.com and look at the description of their stainless line, it explicitly prohibits using dishwasher detergent. So it is "dishwasher safe" but you can't use dishwasher detergent.

Very good quality pans. I like the handles and you can hang the pans from a pot rack. I use these pans multiple times a week, mainly to make eggs "sur la plat" for breakfast or a light meal. Heat pan on the stove top, add butter or oil and (optionally) saute a small amount of onions, peppers or a few spoonfuls of almost any leftovers. Add 1-3 eggs (crack the eggs into a small dish first if you want to be extra careful not to get broken yolks or pieces of shell), and salt, and cook without stirring until whites are beginning to set. Finish by (optionally) topping with a little cheese and then broiling or toasting in a toaster oven until done. This is super easy, easier to do than to describe! Remove from heat and eat right from the pan. Remember the pan is hot, you might need to set it on a potholder at the table. I'm sure these pans would be good for all sorts of single serving dishes, including tapas of course.

I was pleasantly surprised by the quality in these pans. Both are incredibly thick and heavy and it really drives the message home that Calphalon made an effort to create quality for significantly less money than it's competitor, All-Clad namely. I would recommend these pans to anyone however please realize that these pans are small as are Tapas in Spain. Do not expect to make a 3 person meal in these pans unless you are feeding a family of Little People. They are ideal for appetizer sized portions and double as beautiful serving dishes.

Calphalon Simply Stainless 12 Piece Cookware Set




One of my passions is cooking and as a professional cook I find this set to be one of the best I have used, as well as home cooking.

The consideration why Circulon was my first choice are as fellow.

Price - It's a bit expensive, but, compared to other professional cookware (i.e. All Clad, Calphalon, Kitchen Aid...) it really does stand up to these more expensive cookware lines! I did find a great price for my 10 pc set at homeconnectiondirect.com so for me it was not an issue.

The distribution of heat is very impressive. Especially for cooking sauce your chances to burn food using this cookware is slim to none. Circulon does not lie when they say there is even heating..

Customer Review: A great set, depending on your needs!
We bought this set a few days ago, sorry not from amazon, but this i wanted to add my review as I felt there are some issues to clear up. We bought this set because we wanted to get away from teflon which may have negative side effects on your body with long term use. The other issues people noted include the fact that although it states safe for use on induction stoves, it will not work on induction stoves. This is because it is made of 18/10 stainless steel, and basically because there is alot of nickel in the steel that negates the ferrous qualities that allow it to me affected by magnets. Other people have noted problems with water spots or whitish reminants after cleaning, yes we get that too, so we dry out pots straight away, and ignore the white spots. if you are picky there are cleaning products that will get this off, perhaps try lemon juice or vinegar. ( i believe the mild acid neutralizes the hard water) Sticking, yes i am afraid this is a problem and there is a science to getting your eggs to not stick, we decided to keep one non-stick pan for eggs. If you have problem getting the sticky stuff off, fill the pan up with water and boil it until everything softens. In the end, this set looks great, the lids are oven safe and we feel happier eating off steel than teflon. Our dishwashing has had to change but we can deal with that. Think carefully about how these issues affect you before buying the set. We love it. (oh, and the handles stayed marvelously cool too)
Customer Review: WARNING: NOT Induction stove-ready!
I have to give the Calphalon Contemporary cookware 3 stars because while they're beautiful, feel nice in the hand, and seem well made, they do NOT work on an induction (aka, electromagnetic) stove (requires magnetic cookware) even though they're supposedly stainless steel. I bought several pieces, popped them on the stove, and the stove didn't "recognize" them at all. I checked them with a magnet, and sure enough, there seems to be almost NO iron in them (either the stainless exterior & interior is very thin or it just has a low iron content). Needless to say, I was VERY disappointed and have to return them all. I'm sure they're great for standard electric or gas. Check out http://theinductionsite.com for more info on induction stoves. They are incredible - 85-90% efficient (vs. 40% efficiency of gas! and ~70% efficiency of regular electric) with the instantaneousness of gas (instant on/off and high/low). It energizes/heats the pot/skillet itself instead of heating the air (like gas) or an element (like standard electric). Because of that, it doesn't waste any energy, no matter how small the pot. They're extremely safe (if anything drops on the "burner," it won't catch fire; you can't burn your hand, etc.), again because it ONLY interacts with iron. The downside is it only interacts with iron :) so you need stainless steel like All-Clad (which IS magenetic, unlike the Calphalon Contemporary) or cast-iron (like Lodge or Le Creuset). I hope this saves at least one other induction cooktop owner the same hassle of buying/returning.
